QB LOUNGE

OUR LOUNGE WILL HAVE A SOFT OPENING THURS-SUN 4/27-4/30, AND SAT-SUN 5/6 & 5/7 SERVING BAR PATRONS ONLY WHILE WE GET THE SWING OF THINGS AND WORK OUT SERVICE. 

STARTING THURS 5/11 WE WILL BE SERVING FULL FOOD AND DRINK MENU IN BOTH THE RESTAURANT AND LOUNGE!

QB has made the really difficult decision to close for the immediate future until we feel like it’s safe for us, you, and the entire community to re-open. We will not be doing takeout or delivery at this time. We feel it in our hearts that this is the right thing to do. Unfortunately this decision leaves the incredible QB crew without jobs. This is the hardest part of it all. Please stay safe and healthy and know that we can’t wait to feed you again! Be well, friends! We’ll see you soon.

Where's The Beef?

One day this August I took the minimum amount of beef we use each year and plugged it into an online carbon calculator.  I was stunned to see beef alone at QB creates 85,000 pounds of carbon!  That’s equal to 8.5 African elephants, 29 Toyota Prius’, 28,3333 3-month old kittens, 43 great white sharks.  And, if we’re being real here, 64 whole cows at slaughter weight.  Between this number, 85,000, my few gathered climate facts and mostly my own conscience, it became clear that if I want to become someone who is ethical and worthy of this incredible gift we’re all given that I have to start somewhere.  

There’s an infinite amount of information available on climate change.  I do not want to, nor am I smart enough or knowledgeable enough to educate anyone on this issue.  What I have learned about climate change is literally almost nothing; there’s so much to know and too many math equations.  Any “facts” I do share, beyond my own intuition, is a patchy mange of commandeered information from google searches, an interest in desert remediation, podcasts, a few articles and many books not read all the way through.  But I do know that beef is the most obvious and glaring issue in my world where I am in the business of feeding people at QB.  

The ever-wise Jessie, QB’s co-owner, had a desire to eliminate beef over 2 years ago.  At first I said yes and got excited.  Then I went off alone and started to think and the fear of losing customers, being judged for either not doing enough or doing too much and disappointing people, set in.  I backed out and we continued selling beef.  But the beef nagging continued rattling around in my head. What if we served consciously raised beef grazed with carbon sequestering at the forefront?  Unfortunately we would have to charge far too much money for tacos and burritos.  I have decided to eliminate beef: the lowest hanging fruit.
